Josie started modelling at the age of 12. However she was considered too short for the runway so she did mainly editorial modelling and advertising/image modelling.

She has appeared on sports illustrated 3 years in a row in 2000, 2001 and 2002. In 1999 she landed a multi year deal with Maybelline. She also featured in a backstreet boys music video.

Josie is also an actress, she featured in films such as "The Mallory Effect", "Swatters" and "The Little Black Book". She was one of Dracula's brides in "Van Helsing" and briefly seen as the cigarette girl in "The Aviator". In 2005 she was struck a deal with "EA games" to appear as one of the main characters in "Need for Speed: Most Wanted".

Josie also had a long relationship with the magician David Blaine.
